Penne from Heaven


SHRIMP, BLACK OLIVES,FETA AND A ZESTY TOMATO SAUCE SERVED OVER PENNE NOODLES
I can't seem to get enough of feta cheese these days. I had to stop Tom eating so I could take a picture.
2 tsp olive oil
1 c choppped red onions
2 tsp minced garlic
1 1/2 c chopped zuchinni
1 can diced tomatoes (28 oz)
1 cup tomato sauce
1 Tbsp each minced fresh oregano and basil
1/2 tsp fresh ground pepper
1/4 tsp crushed red pepper flakes
12 oz uncooked penne pasta
8 oz shrimp raw and peeled. ( I used the frozen cooked ones cause they are cheaper)
1/4 c sliced black olives
1 cup crumbled feta cheesse
1. Heat olive oil in a large pot over medium heat. Add onions and garlic and cook and stir about 3 minutes until onions are softened. Add zuchinni and cook 3 minutes more.
Add diced tomatoes and their liquid,tomato sauce, oregano, basil, pepper and ctushed red pepper flakes. Bring to boil. Reduce heat and simmer for 10 minutes uncovered.
2. While suace is cooking prepare penne according to pkg directions.
3. Add shrimp and olives to sauce. Heat through about 3 minutes.
To serve, spoon cooked penne onto serving dishes. Top with suace followed by feta and chopped parsley.

Honey glazed Curry Chicken


I have to thank the Ladies of Saskatoon cookbook for this one. Still on my let's try something new today.
3 lb chicken pieces( can be wings, thighs,breasts)
1/2 c flour
1/2 tsp salt
1/2 tsp cayenne pepper(optional)
1/2 c butter divided
1/4 c brown sugar
1/4 c liquid honey
1 lemon juiced or 1/4 c lemon juice
1 Tbsp soy sauce
1 1/2 tsp curry powder
In a bag, place flour, cayenne and salt. add chicken and shake to coat. Pour 4 Tbsp butter into baking pan, then add coated chicken. turn once to coat. Bake for 30 minutes at 350. Meanwhile combine rest of ingredients and the remaining butter. Pour over chicken and return to oven until chicken is done. Cooking times may vary depending on the type of cut used, approximately 10 - 20 minutes. Serve over rice.
